«Nasco carnivoro, per passione. Ho sempre coltivato la cultura della carne. Anche quando in cucina mi occupavo di altro, dentro di me c’era una certezza: prima o poi avrei aperto una braceria. Può sembrare strano, ma pur non mangiando pesce, l’ho cucinato per anni… mentre continuavo a inseguire il mio vero sogno: la carne». Un percorso non lineare, segnato anche da momenti difficili che hanno però rafforzato la sua determinazione: «Poi è arrivato un momento difficile. Un incidente ha colpito il nostro locale e ci siamo trovati davanti a una scelta: fermarci o rinascere. Abbiamo scelto di rialzarci. Così è iniziato tutto: una nuova vita, una nuova identità. Oggi siamo una braceria specializzata, dedicata interamente al mondo della carne, alla sua cultura, alla sua qualità, alla sua passione. Perché alla fine, certi sogni non si abbandonano… si realizzano».

Accanto a lui, la famiglia rappresenta una risorsa fondamentale: «Al mio fianco c’è la mia spalla importante, mia figlia Nathalie: una ragazza meravigliosa che ogni giorno si dedica a questo lavoro con impegno, costanza e amore. E poi c’è mia moglie, il cuore organizzativo della Braceria, che gestisce la cassa e tutta la parte contabile con precisione e dedizione». Una squadra che incarna perfettamente il valore della collaborazione: «In un’attività come la nostra, fatta di sacrifici e obiettivi da raggiungere, non si può fare tutto da soli. Servono persone valide, e io mi sento davvero ricco perché ho accanto una squadra fatta di famiglia e di persone che danno il massimo ogni giorno».
Non solo innovazione però. All’interno dell’universo “aziendale” de La Bracemia, resta infatti centrale il legame con la tradizione: «Un aspetto per noi fondamentale, che non trascuriamo mai, è la tradizione. Nella nostra cucina non mancano mai i sapori autentici: dalle semplici cime di rape stufate, alla classica carbonara, fino a tutti quei piatti che custodiscono la tradizione barese». E conclude: «Siamo orgogliosi del nostro territorio e delle nostre radici, ed è proprio questo che vogliamo trasmettere ogni giorno a chi sceglie di sedersi alla nostra tavola».

“I was born a carnivore, out of passion. I have always cultivated the culture of meat. Even when I was doing something else in the kitchen, there was a certainty inside me: sooner or later I would open a grill. It may seem strange, but although I don’t eat fish, I cooked it for years… while I continued to pursue my true dream: meat.” A non-linear path, also marked by difficult moments that have strengthened his determination: “Then came a difficult moment. An accident hit our restaurant and we were faced with a choice: stop or be reborn. We have chosen to get back up. That’s how it all began: a new life, a new identity. Today we are a specialized grill, dedicated entirely to the world of meat, its culture, its quality, its passion. Because in the end, certain dreams are not abandoned… are realized”.
